A last second vacation to with the cheapest package of hotel/flight we could find, Turks and Caicos had fairly decent Conk salad, great transportation (via friends made at the hotel,) and unmatched snorkeling and scuba diving. Huge turtles, reef squid, beautiful coral and plant life, colorful fish, large crabs, deep drops, and teethy barracuda made quite the enjoyable experience - just watch out for fire coral - it teaches you a lesson to stay off the precious reefs (Leigh was educated...)
